an international conference on excellence in olive oil, from agriculture and sensory evaluation to the culinary arts. every now and again, actually frequently, i find the need to gain inspiration outside of the four walls that i know called "the kitchen." it often comes from visiting markets, farms and producers of exceptional products. yesterday & today, it was from the olive oil conference held at UC Davis. it was a meeting of various factions of the industry which includes; producers, scientists, marketing gurus, educators, chefs and others. the conference brings all of the various parties together to share ideas, experiences, theories, and visions for creating a super premium category for olive oil. it goes "beyond extra virgin." tomorrow, the conference will continue in napa valley at the culinary institute of america at greystone. my mind has been reeling since the conclusion of today's session. i will give a detailed account at the conclusion of the conference, from a chef's perspective.
